A small bakery is planning to grow on Buffalo's West Side. Since Bread Hive, a worker cooperative bakery, formed last year, its products have been available at a walk-up window at the bakery at 123 Baynes Street and at select stores, restaurants and farmers markets.
Over the next six months or so, Allison Ewing, an owner and founder, says BreadHive will be working on opening a cafe on Connecticut Street near 14th Street.
Ewing says along with their existing products, the cafe will enable Bread Hive to offer soup, sandwiches and various baked goods.
"People will be able to run in and grab some bagels and a sandwich or they'll be able to sit and have a meal. They'll be able to just have some coffee and check us out. It's a different dimension of the thing we're doing, but we're excited to put our own stamp on a lunch spot," Ewing said.
Another owner, Valerie Rettberg-Smith credits local residents for Bread Hive's rapid growth since opening in April of 2014.
Rettberg-Smith says, the cafe should be open in the spring of 2016.
