Flying Bison breaks ground on new Larkinville brewery

Chris Caya/WBFO News

Work kicked off today on Buffalo's newest brewery. Flying Bison Brewing Company broke ground on its new home at 840 Seneca Street in the city's Larkinville neighborhood. Flying Bison founder Tim Herzog says he is shooting to open by mid July.

"There will be a beer garden, a nice patio where people can come and enjoy the day, take a tour of the brewery, sample the beer and see what it is that we do. There will be a glass wall between the sampling area and the production area so they can come really see what we're doing," Herzog said at a groundbreaking Friday.

Herzog says the new brewery is going up on the site of a former barrel house for the old William Simon Brewing Company, which was just six blocks away.

Herzog says back in 2000 when Flying Bison was one of only three breweries in the area, he never envisioned craft beer would become so popular. He says by the end of the year, there will be eight more.

"I think it's safe to say that people in Buffalo like beer," he said.
